About the course

This highly sought after traineeship is now available to Victorian secondary school students studying VCE and VCAL. 

You will gain an understanding of front of house, food preparation and cookery principles and develop practical skills in the kitchen at Fountains Restaurant (Box Hill Campus - Elgar) or Mitchell’s View (Lilydale Lakeside Campus).

You will learn how to cater for special occasion dinners, provide restaurant quality and function food, along with using commercially prepared products. You will also gain your Food Handlers Certificate and Responsible Service of Alcohol.

Intake Dates & Course Length

February, April or July 

Part time: 12 months (this course will begin as online/remote delivery and then move into face to face delivery Wednesdays 1.30 to 5.00)

You'll be able to work shifts in Fountains Restaurant (Box Hill Campus - Elgar) Wednesday, Thursday or Friday evenings with the possibility of extra shifts if available. Alternatively at the  or Lilydale Lakeside Campus Wednesday Evenings with the possibility of extra shifts if available


This is a blended delivery course which will include a combination of online, remote and face to face delivery. Blended learning can involve a range of online programs and resources including StudentWeb, Microsoft Teams, Cisco Webex, Skype, specific industry platforms, pre-recorded sessions, assigned reading, tutorials, discussion boards, and online activities. Blended learning also involves face-to-face attendance at classes or practical placements.

On successful completion of this course, you may be able to:

  • work as a commercial cook in commercial kitchen environments for hotels, restaurants, cafes, clubs, airlines, hospitals, student accommodation areas, cafeterias, corporate organisations or event catering organisations

Entry Requirements

This course can only be completed as part of your secondary school studies in years 10, 11 and 12.

You must have the approval of your school in the form of a signed training plan (supplied by Box Hill Institute) to enrol in the course.


To assist prospective students to determine whether a course is suitable and appropriate for the individual needs, Box Hill Institute will assess all students’ language, literacy and numeracy and digital literacy by asking you to undertake a self-assessment review prior to the enrolment.

A course advisor will discuss the outcomes of the review and make recommendations about whether the course is suitable for you, and identify additional support where required.
