Discover the path to becoming a kitchen supervisor or team leader through our kitchen management course. This cookery course is designed to equip you with the skills and confidence needed to operate independently or with minimal guidance while using discretion to solve non routine problems.

Immerse yourself in a dynamic learning experience with classroom lessons complemented by hands on training in Fountains Restaurant. This comprehensive program prepares you for diverse opportunities in various venues, including restaurants, hotels, clubs, pubs, cafés, and coffee shops, or even in managing your own small business.

It's important to note that our commercial cooking course aligns with both Australian and international standards. Please be aware that the program involves the handling and tasting of alcohol, and excludes Halal products. Assessment tasks may include the use of products containing alcohol and pork. Entry Requirements


You must hold a SIT30816 Certificate III in Commercial Cookery or SIT30821 Certificate III in Commercial Cookery.

PRE-TRAINING REVIEW - to assist prospective students to determine whether a course is suitable and appropriate for the individual needs, Box Hill Institute will assess all students’ language, literacy and numeracy and digital literacy by asking you to undertake a self-assessment review prior to the enrolment. A course advisor will discuss the outcomes of the review and make recommendations about whether the course is suitable for you, and identify additional support where required.

Pathways & Accreditation


After successful completion, you may choose to pursue advanced level qualifications such as a Diploma of Hospitality, followed by a Bachelor of Hospitality Management. These comprehensive programs will equip you with an in depth understanding of areas such as business management, leadership, marketing, and hospitality operations.  These advanced level qualifications are designed to set you up for lucrative roles in restaurant management, hotel management, and event management. Course Structure


If you have completed the SIT30821 Certificate III in Commercial Cookery, you will need to study 33 units (including 17 units completed as part of the SIT30821 Certificate III in Commercial Cookery, and the remaining 16 will be completed during your one semester of SIT40521 Certificate IV in Kitchen Management).

If you have completed the SIT30816 Certificate III in Commercial Cookery, you will need to study 33 units (including 8 units credited from the SIT30816 Certificate III in Commercial Cookery; 9 units will require GAP Training due to a change in the Training package, and the remaining 16 will be completed during your one semester of SIT40521 Certificate IV in Kitchen Management).

Box Hill Institute requires students to complete the SIT30816/SIT30821 Certificate III in Commercial Cookery before enrolling in the SIT40521 Certificate IV in Kitchen Management.
